ASIAN GROUND BEEF AND CABBAGE STIRFRY
Made this for Chris and Zilla when I was visiting in March 2023.
Pretty quick and easy! I made a few substitutions based on what I had and it tasted pretty great! I used a tin of coconut cream instead of the “coconut aminos”, and we had no ginger, so I used some powdered cinnamon instead. And obviously sub the ground beef for a vegan version. I used gardein. But I am sure it would be great with beyond etc.
Oh and I served it with glass noodles rather than rice, but I am sure either way would be good!
Ingredients
Sauce
1/2 cup coconut aminos
1 tbsp rice vinegar
2 tsp sesame oil
1/2 tsp crushed red pepper flakes
Stir Fry
1 tbsp avocado oil or your favorite cooking oil
1 onion chopped
1 lb ground beef
4 garlic cloves minced
1 inch ginger grated
1 head of cabbage thinly sliced – about 8 cups
1/2 cup shredded carrot
Salt & pepper to taste
Green onion slices and sesame seeds for garnish
Instructions
Stir together all the sauce ingredients. Set aside.
Heat oil in a large skillet over medium high heat.
Add onion and cook stirring until translucent, about 5 minutes.
Stir in ginger and garlic for 1 minute until fragrant.
Add ground beef and cook until browned, breaking it up with a wooden spoon.- about 5 minutes.
Stir in shredded cabbage, carrots, and the sauce. Cook stirring until the cabbage is wilted and the sauce is cooked down, about 5 minutes
Taste to add salt and/or pepper. Serve warm, sprinkled with green onions and sesame seeds
