MOROCCAN CHICKPEA SWEET POTATOES
Have made this one for Mum and Daryl in Adelaide, for peeps in Melb and for Chris and Zilla here in Portland 0R. Always a big hit!
Inspired by one of my favourite orders from Spuds.
Ingredients
Sweet Potatoes
Chickpeas
Kale and Wild Rocket (or similar leafy mix)
Vegan Sausages
Tinned Beetroot
Hummus
Spring Onions
Moroccan Spices (can buy Moroccan spice premixed, or use a mix of paprika, cumin, cinnamon, ginger, cloves, salt, pepper, cayenne, coconut sugar)
Method
Bake the sweet potatoes, prick them with a knife several times, and put them in the oven at about 250celcius till they are baked (40mins-an hour in my experience)
Cut up the sausages in to small cubes, cook them with the moroccan spices and the chickpeas.
Chop the spring onions.
Serve potatoes with all of the above!
